I am not kidding, either. Easy meal prep ideas are a much when things get busy. As we enter into the new school year, these recipes are a must! You know, the ones that you can put together quickly and be able to eat on all week.
THe kitchen friend, a crock pot.
Most of you have probably met her before, Crock Pot. She is loyal majority of the time and loves to make your life easy. This is why I keep her around 😉 Seriously though, my crock pot is always helpful when I am in a time crunch. It was very helpful in the pineapple pork lunch meal prep!
I usually will use a crock pot liner to make the cleaning process easy. Another added bonus to the meal prep idea! You can toss everything together in the crock pot on a Sunday morning, have it shredded and divided up into food storage containers by the evening. Your lunches all ready to go!
Pineapple and pork go together, okay.
Some of you may be thinking, “Really? Pineapple pork lunch meal prep? Why the pineapple?” Well, pineapple and pork just go together. Almost like how peanut butter and jelly go together. The pineapple adds the perfect sweetness to the pork. It was no wonder that I had to include pineapples in this recipe.
Even if you aren’t a pineapple person, you can still add them to the crock pot to add to the flavor. Then remove them before you shred the pork.
Let’s talk about the sides.
Other than the pork, you are going to want sides. For this pineapple pork lunch meal prep, I have added sautéed squash and zucchini and steamed rice. The perfect sides that are so good! You of course and mix these side ideas up. Maybe you would rather use the pineapple pork in a wrap? You decide!
Pineapple Pork Lunch Meal Prep
When life gets chaotic, you need an easy meal prep that is also delicious! This Pineapple Pork Lunch Meal Prep is the perfect idea for a grab-and-go lunch idea!
Ingredients
- 6lb pork butt with bone
- 1 cup pineapple with juice
- 3 tbsp Pork Butt Rub
- 1 jar of a marinade (Hot & Spicy)
- Sides:
- 3 cups steamed jasmine rice
- 3 yellow squash
- 2 zucchini
Instructions
- Prep the pork butt by scouring the fatty layer
- Add the pork, pineapple/pineapple juice, seasonings to crock pot
- Cook on low temperature for 12 hours, or until the pork falls easily off the bone.
- While pork is cooking, prep for the rice, zucchini and squash
- For the squash and zucchini, you will need to cut into thin slices to make sauteeing easier. Sautee in EVOO over medium-high heat.
- Store until ready to eat.
- Allow to cool for about 5 minutes, then remove bone and shred
- You can add a little bit of the liquid in the crockpot to the shredded pork so that it won't get dry.
- Divide up the pork, rice, and squash/zucchini into food storage containers and keep in fridge for up to 1 week!
