A fruit pizza is always in the works when you have left over cookie dough! After realizing we were not going to be baking all the sugar cookie dough from last week, fruit pizza popped into mind. Our family is all about some fruit pizza, and this one is spooktacular! Here is the perfect dessert treat for any Halloween or spooky occasion.
Jump to RecipeAll about some pizza, fruit pizza that is.
If you have never tried fruit pizza, well, you are missing out. This is one of our favorite desserts to make. We love fruit and cookies, go figure! Plus, it is super easy to make and can be made the day before. Sugar cookie dough, fruit, cream cheese, and powdered sugar is all you will need. This spooktacular version takes it up a notch just in time for Halloween. The added candy and purple food coloring gives it just the right amount of Halloween touch. We even tried to pick out fruits that could have a spooky feel about them.
I have had so many different versions of fruit pizza. From ones that use a corn syrup type of sauce to the cream cheese sauce on mine. The variety of fruits can also differ from pizza to pizza. For the 4th of July, we opt for all those fruits that are blue and red! That is the great thing about this type of pizza. You can personalize it to your very own taste! My husband is not a huge raspberry fan. We normally don’t put those on our pizza. So this time, more pizza for the rest of us due to the raspberries 😉
Spooktacular fun!
Halloween is all about that mixture of spooky and fun. Make this pizza however you want to! Maybe you want to put gummy spiders on it instead of the gummy snakes. Go for it! It is all about your imagination and what you love. Maybe a basic cream cheese icing with a drizzle of strawberry glaze to look like blood. I hope you all enjoy this super fun version of fruit pizza! Sugar Cookie Crust
- 3 cups All Purpose flour
- 1/4 cup powdered sugar
- 1/2 tsp salt
- 1 cup granulated sugar
- 2 tsp baking powder
- 1 cup butter, unsalted
- 1 tsp vanilla extract
- 1/4 tsp almond extract
Cream Cheese Icing
- 1 8oz Cream Cheese
- 1/4 cup powdered sugar
- 1 tbsp milk
- 2-3 drops purple food coloring
Fruit/Candy Toppings
- 2 Kiwi, sliced
- 1 cup raspberries
- 1 cup blackberries
- Assorted Candies
Instructions
Sugar Cookie Crust
- Preheat oven to 325
- In a medium size bowl, mix the flour, baking powder, and salt. Set aside
- In a large mixing bowl, cream the butter and sugar together.
- Once the butter and sugar is mixed well, giving to a creamy mixture, add the egg and extracts. Mix until incorporated.
- Slowly add the flour mixture, mixing well after each addition. Once all the flour mixture is added, remove from the bowl and knead until you have a dough ball.
- Place dough ball on a parchment lined baking sheet and use powdered sugar for rolling out the dough. Make sure it is only enough to prevent the dough from sticking. Roll
- Bake crust for 12-15 minutes. Remove crust from the oven before the edges get too brown. You don’t want to overbake!
Cream Cheese Icing
- In a mixer, whip softened cream cheese with milk and powdered sugar. Add the food coloring and continue to whip until it is all mixed well.
- Set aside until cookie crust is completely cooled
Assembling Cookie Crust Pizza
- Once cookie crust is completely cooled, top it with the cream cheese icing. Then decorate with the fruit and candy.
- Enjoy! Leftover can be kept in fridge for 3-4 days. Note that candy will harden after being in the refridgerator.
