I still can’t believe school is right around the corner. When I say right around the corner, I mean next Friday! I have truly enjoyed this summer break, but it is time to get back to that school routine. This means start putting together all the easy recipes that will make things easier during the chaos of the week. This Simple Baked Peach Oatmeal is the perfect one for your breakfast menu!

Quick oats vs. Rolled Oats.
I always find myself questioning the difference between quick oats and old fashioned rolled oats. The name itself kind of gives it away. Quick oats cook much quicker. This is due to the way they are processed. Quick oats require more time processing than rolled oats. They are steamed for a longer period of time and then rolled and cut into smaller flakes. This smaller size helps them absorb liquid quickly, hence cooking faster.
Rolled oats are much larger and thicker than quick oats, giving way to a longer cooking time. When it comes to nutrition, the biggest difference would be that quick oats have a slightly higher glycemic index. This means that they can raise your blood sugar slightly quicker compared to rolled oats.

I apologize now for getting that song stuck in your head #supermariobrosmovie . Peaches and oatmeal, though. A perfect match in my opinion! I am obsessed with these two things and what they bring to the dish when matched up. If you aren’t a big peach fan, you can always opt for any of the berries : blueberries, raspberries, etc. I have not tried this with any other fruit. Let me know if you decide to be creative and switch out the fruit!
Fresh peaches were used for this simple baked peach oatmeal. I didn’t want to use frozen because I wanted to keep a thicker consistency for my oatmeal bake. The peaches were cut into bite sizes while leaving a few slices to toss on top to give the baked oatmeal a pretty look!
Perfect for leftovers, if there are any.
I love when I have a great recipe that can serve up some good leftovers as well. This simple baked peach oatmeal is perfect for leftovers. You can just store the leftovers in an airtight container or cover the baked oatmeal with foil. Keep in the refrigerator for up to 3-4 days. You can pop the leftovers in the microwave for about 30-40 seconds. Ready to go! The peaches and oatmeal are still good heated back up. I promise!
Simple Baked Peach Oatmeal
Peaches and oatmeal make for a perfect match, especially in this simple baked peach oatmeal! Great for a busy week and for leftovers.
Ingredients
- 3 cups of old fashioned rolled oats
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/4 salt
- 1 3/4 cup milk
- 2 eggs
- 1/2 cup maple syrup
- 4 tbsp melted butter
- 3 fresh peaches, in bite size pieces, a few slices saved for topping
- *cinnamon and sugar for sprinkling on top
Instructions
- Before preheating the oven to 350, move the oven rack to the lower third position.
- Spray a 9x9 or 11x7 baking dish with non-stick spray and set aside.
- Add all the ingredients, minus the peaches, in a large bowl and mix well. Start off by mixing the dry ingredients.
- Fold in the peaches and pour into the prepared baking dish.
- Top with peach slices and cinnamon sugar. Bake for 35 minutes.
- Allow it to cool for 5 minutes before serving!
