The perfect cake to celebrate the summer, a Strawberry Lemonade Cake.
We are getting all in the summer mood over here as the school year comes to an end. What better way to celebrate than with a refreshing summer drink, or might I add cake?! This Strawberry Lemonade Cake is the perfect way to bring in the summer as well as get your little ones in the kitchen baking.
A cake great for baking with kids.
It is great to have ideas and ways to keep your kids involved during the summer months. Besides the usual summer camps and outdoor play, getting your kids in the kitchen is an awesome activity. If you follow me on Instagram, then you would have heard all about my new IGTV series, Cooking with Chloe. Over the next few weeks, I will be sharing all the recipes that are great for kids to do. My toddler, Chloe, will be the main host.
We decided to start this series off with a cake because why not? Baking is one of the best ways to get your kids excited about being in the kitchen, besides eating.
The more lemon, the better.
Lemonade is a beverage of choice during these hot months in Louisiana. There is something refreshing about it. Don’t you think? After walking down the baking aisle at Target, we came across a Pillsbury Strawberry Cake Mix and then a lemon frosting. What do you get when you put the two together? Strawberry Lemonade of course! We wanted the lemon to truly stand out because no one likes a watered down lemonade. By adding a little bit of lemon extract to the frosting, it was good to go!
The smell is even fabulous according to Miss Chloe. Here’s how you can drink your lemonade and eat it too.
Strawberry Lemonade Cake
Looking for the perfect dessert to celebrate this summer? Well this Strawberry Lemonade Cake is where it is at! Who doesn't love a refreshing glass of lemonade during the hot months? Here is how you can drink your lemonade and eat it too!
Ingredients
- 1 box of Pillsbury Strawberry Cake Mix
- 3 eggs
- 1/2 cup of oil
- 1 cup of water
- 1 container of lemon icing
- 1 tsp of lemon extract
- Pink and gold sprinkles
Instructions
- Preheat oven to 350
- Prepare the cake batter according to the box.
- Divide the batter into 2- 8" round cake pans that have been lined with parchment paper and sprayed with non-stick spray
- Bake the cake for about 30-34 minutes
- Allow the cake to fully cool. Then remove from cake pans.
- Prepare the frosting by dumping out the entire container of frosting into a medium sized bowl. Add the lemon extract and stir well.
- Spread the frosting onto the first cake, then add the second layer on top and frost the rest of the cake.
- Add the pink and gold sprinkles!
