Peaches and oatmeal make for a perfect match, especially in this simple make ahead baked peach oatmeal! Great for a busy week and for leftovers.

– 3 cups of old fashioned rolled oats – 1 tsp ground cinnamon – 1 tsp baking powder – 1/4 salt – 1 3/4 cup milk – 2 eggs – 1/2 cup maple syrup – 4 tbsp melted butter – 3 fresh peaches, in bite size pieces, a few slices saved for topping

Ingredients:

Before preheating the oven to 350, move the oven rack to the lower third position. Spray a 9x9 or 11x7 baking dish with non-stick spray and set aside.

STEP ONE

Add all the ingredients, minus the peaches, in a large bowl and mix well. Start off by mixing the dry ingredients.

STEP TWO

Fold in the peaches and pour into the prepared baking dish.

STEP THREE

Top with peach slices and cinnamon sugar. Bake for 35 minutes.
