I can’t recall the first time I ate queso, but I do know it was so good that I knew I was never going to give it up. We don’t pass up queso whenever its on the menu, and this is especially true for when we go eat at a Mexican restaurant. As much as I love queso, this easy homemade pork chorizo queso is even better. I give full credit to the pork chorizo. It is the perfect ingredient to an already yummy appetizer.

Say Cheese!
I know of one individual who truly loves cheese. Like really really loves cheese. This individual would be my son. He loves it so much, that he will choose cheese over anything else. I make this keto lasagna with ‘cheese’ noodles. He would rather eat it than any other lasagna. Believe me, he knows the difference between my keto lasagna and any other lasagna made with real lasagna noodles.

Brady also knows his queso. I wasn’t sure how he would feel about my easy 3 cheese queso with pork chorizo. Like I said, he loves his cheese. Adding an extra ingredient to his beloved cheese isn’t always his favorite. Let me tell you this, he loves this queso with the added pork chorizo. Not going to lie. I am all about it as well!
I know some recipes call for ground sausage, but the pork chorizo is even better because it has that heat that comes along with it. The texture and the flavor are a perfect match for this cheesy dip.
What exactly does queso include?
One thing that is obvious is the cheese! Queso is the Spanish term for cheese. It is speculated to have originated in Mexico in the 19th century. It made its way to the United States via Texas, which shares a border with Mexico. You know what else? It didn’t start off as a dip. Queso was actually was a topping for tacos. It was such a hit, that it became the signature dip that we know of today.

There is yellow queso then there is white queso. There is also queso that has meat added to it. In the case of this easy 3 cheese queso with pork chorizo, it is a mixture of all things.
A queso worth remembering.
To make the most of this queso and be the star of the party, you will need all of these ingredients:
- Velvetta Cheese (1/2 a pound)
- Pepper Jack Cheese (1 block, 8oz)
- Monterey Jack Cheese (1 block, 8oz)
- Rotel (1 can)
- Pork Chorizo (12 oz)
Mix it up, heat it up, serve it up.
I love a good queso recipe because you can heat it up many different ways. Toss everything in the crockpot, toss it all in a microwave-safe bowl, or stove top. I went with stove top method and cooked it in a cast iron skillet. Something about a cast iron makes it even better. I know I am not the only one who thinks this.
If I were in a rush, I would definitely toss it all in a crock pot. Then cook it on low for 2 hours. Mix it up and serve! Once all the cheese is melted, you can switch the heat setting to warm. This will keep it from over cooking and burning, but also keep it still melted.
As for my queso, the cast iron skillet helps keep the queso warm for a good bit of time since it holds in heat for longer.
Easy 3 Cheese Queso with Pork Chorizo

Ingredients
- 8 oz Velvetta Cheese, cubed
- 8 oz Monterey Jack Cheese, cubed
- 8 oz Pepper Jack Cheese, cubed
- 12 oz Pork Chorizo
- 28 oz can of Rotel, with liquid
Instructions
- Prep all the cheeses, cutting them in cubes.
- Cook the pork chorizo in a deep cast iron skillet.
- Next, add the can of Rotel and the cheeses
- Heat over medium heat until the cheese is melted, stirring occasionally to make sure the cheese doesn't burn.
- Serve with tortilla chips or veggies!
