I did not realize how much I loved a good ol’ plate of jambalaya until I moved to Louisiana. I know, I am from the south. Mississippi south is not the same as Louisiana south when it comes to the food. There is something about Louisiana food that I have yet to find anywhere else, and that includes their jambalaya.
Jambalaya is a dish that originates from Louisiana and is made with meat or seafood. For this Easy Jasmine Jambalaya, I stuck with chicken chunks and smoked sausage to make it quick as well as Minute Instant Jasmine Rice!

Chicken and sausage are the only 2 other main ingredients in this Easy Jasmine Jambalaya recipe. Of course you can swap out the chicken for pork or even seafood. I wanted to keep it simple for a quick meal. With the chicken breasts and the smoked sausage, you can quickly cut it all into bite sizes. The chicken and smoked sausage can even be prepped ahead of time! Precut all the meat and even brown.
Putting it all together with the Minute Instant Jasmine Rice.
Once the chicken and smoked sausage has been browned, you only need to sauté the “season blend” and make a quick roux. What is “season blend”? In Louisiana, we call it the trinity: diced onion and 2 colors of bell peppers. I like to purchase this mix already ready to go! If you can’t find season blend in your local store:
Season Blend:
- 1/4 white onion
- 1/4 red bell pepper
- 1/4 green bell pepper
You can even make this in bulk and keep in the freezer for whenever you need it. Once the season blend is sautéed, you will add in your 1 tbsp of all purpose flour. If the mixture gets too dry, you can add a little more olive oil. Cook this for about 3-5 minutes, constantly stirring. The flour will burn quickly if not. Then add your chicken stock! Y’all this is basically it on all the prep work.
From this point, you will add the uncooked Minute Instant Jasmine Rice and browned meat. Then pour it all into a 10″ x 8″ casserole dish. Then it will bake at 375 degrees for about 30 minutes. Make sure it is covered well to keep from it getting dried out while cooking.
Easy Jasmine Jambalaya
Easy Jasmine Jambalaya is a jamblaya recipe that brings not only the flavor with the Minute Instant Jasmine Rice, but it is quick!
Ingredients
- *1 cup Minute Instant Jasmine Rice
- *5 chicken tenders, cut into bite sizes
- *1 link of smoked sausage, cut into 1/2 slices
- *3/4 season blend
- *3 cups chicken stock
- *~3 tbsp olive oil
- *1 tbsp cajun seasoning
- *salt & pepper
Instructions
- Preheat oven to 375.
- Prep meat: season chicken with salt and pepper, and brown.
- Brown the smoked sausage and set aside with the browned chicken.
- Add ~1 tbsp olive oil and heat up on medium heat, then add season blend.
- Sauté for about 3-5 minutes, then add flour. Constantly stir for about 3 minutes, add a little more olive oil if the mixture is too dry.
- Add in chicken stock and stir. Heat until mixture comes to a boil.
- Add the uncooked Minute Instant Jasmine Rice and browned meat along with the Cajun seasoning. Stir.
- Pour this mixture into a 10x8 casserole dish and cover.
- Bake for 30 minutes.
- Allow to cool for 5 minutes, then enjoy!
