- 1 cup Minute Instant Basmati Rice, unprepared
- 1 cup Coconut Milk
- ~1lb Raw Shrimp, deveined
- 1 med. Red Bell Pepper, diced
- 1 tbsp Minced Garlic
- 1 tbsp Tomato Paste
- 3 tbsp Red Curry Paste
- 1 tsp Brown Sugar
- 2 cup Chicken Broth
Instructions
- Preheat oven to 375.
- Season shrimp with salt & pepper.
- Add olive oil to a large deep saucepan, and bring to medium-high heat.
- Add shrimp and cook for ~2 minutes/side. Remove from heat and set aside.
- Add in diced bell peppers and saute for about ~4 minutes, then add the minced garlic and saute for an additional 2 minutes.
- Add in the pastes, chicken broth, coconut milk, and brown sugar. Stir and bring to a simmer.
- Add in unprepared, Minute Instant Basmati Rice, then remove from heat.
- Pour rice mixture into a large, deep 9x13 casserole dish. Fold in the shrimp and cover with foil.
- Bake for 20 minutes.
