When you are brought fresh blueberries, you make an easy blueberry cobbler.
When I say I was ecstatic to get fresh blueberries when my dad and stepmom visited from North Carolina, I am not exaggerating. I was excited and couldn’t wait to do something with them. Some of the blueberries were cleaned up and placed in the freezer for later use. A small amount was eaten by my youngest, and about 3 cups were put to the side for this easy blueberry cobbler recipe.
I am always down for some blueberry cobbler.
Honestly, I am down for any type of cobbler. Peach, blackberry, and blueberry cobbler will always be more than delicious to me. Did you know that it is easy to make? Yep. Cobbler is almost one of the most easiest desserts to put together. With only a few ingredients, you can have a warm baked dish at the table in less than an hour.
I also love the fact that you don’t have to wait long after you finish baking cobbler to be able to enjoy it since it is best eaten warm. A scoop of vanilla ice cream on the side? Yes please! If you are on a gluten free diet, you can opt out the flour and sugar and replace it with a gluten free flour substitute as well as a sugar alternative.
Easy Blueberry Cobbler Recipe
Nothing like a great blueberry cobbler. This easy blueberry cobbler recipe has a more cake like topping that pairs perfectly with the blueberry filling!
Ingredients
- 3 cups of fresh blueberries, washed
- 1 1/4 cup of flour
- 1 1/4 cup of granulated sugar
- 1 tsp of baking powder
- 1/4 cup of milk
- 1 egg
- 1/4 tsp of ground cinnamon
- 2 tablespoons of vegetable oil
Instructions
- Preheat oven to 375
- Add the blueberries to a large bowl and add 1 cup of the sugar and 1/4 cup of the flour. Gently mix well and set aside.
- In another bowl, add the 1 cup of of flour, 1/4 cup of granulated sugar, baking powder and ground cinnamon. Mix well.
- Add the milk, egg and vegetable oil and mix well. Batter will be very thick.
- Pour the blueberries and sugar-flour mixture into a greased 8x11 casserole dish.
- Spread the batter mixture over the blueberries, covering them the best you can.
- Bake uncovered for 35 minutes our until the topping is browned.
- All to cool for about 10 minutes before eating.
