When a hurricane renders you ‘powerless’, you take advantage of an easy cast iron skillet blueberry biscuits recipe.
Y’all, I am not going to lie. The past 10 days has been brutal. We lost power about 10 days ago, and it has been nothing short of being difficult. We have been living off the generator the entire time. That is one thing I am thankful for: generator, gas, and no damage to our home. It did make cooking meals a little difficult. We have a gas stove inside, but the amount of heat it puts of is unbearable when there is absolutely no a/c. So, it was an easy cast iron skillet blueberry biscuits recipe on the outside gas burner for a breakfast win!

I did not make these biscuits from scratch. Thankfully we had a can of Pillsbury Blueberry Biscuits in the refrigerator. These blueberry biscuits are so good! We normally bake them on a cookie sheet in the oven, then top with the icing that is included. I decided to bake these suckers, but to do it all on the outside gas burner, in a cast iron skillet.
The cast iron skillet does make things a tad bit tricky. If you have never cooked with a cast iron skillet, it is important to note they heat up quickly and maintain that high heat temperature. I love cooking with them for this very reason, but they can burn the bottom of a biscuit really quick if you aren’t careful. Here’s more on cooking with cast iron skillet.

You want to start off with a cast iron skillet that has been seasoned and well greased. You will also want to cook these biscuits on a lower temp than usual since you will be cooking them on a burner, not in the oven. Using aluminum foil to create a tent over the biscuits, you will be able to create a better temperature surrounding the biscuits to help them rise.
The bottoms of these biscuits can easily burn if you aren’t careful. This is why I would be sure to have the temperature on a lower setting!

I had to up the notch when it came to the biscuits. I mean, why not? We are already having to deal with the chaos of Hurricane Ida, might as well make the most of these easy cast iron skillet blueberry biscuits! I have leftover frozen blueberries in our freezer that have been wanting to be used in a great recipe. A blueberry syrup was what was on my mind for these blueberry biscuits! The blueberry syrup is super easy to make, and perfect for the making when you have a gas burner outside.

Just drizzle this blueberry syrup on top of these blueberry biscuits. Be ready to find joy in midst the excruciating heat of not having a/c during the end of summer heat of Louisiana.
Easy Cast Iron Skillet Blueberry Biscuits
Perfect way to enjoy blueberry biscuits, especially when you are living the camp life. These easy cast iron skillet blueberry biscuit with a blueberry syrup are simple and delicious!
Ingredients
- 1 can of Pillsbury Blueberry Biscuits
- 1 cup of blueberries
- 1 cup of sugar
Instructions
- Grease a cast iron skillet with either butter or cooking spray.
- Place the biscuits into the skillet
- Create an aluminum foil tent to cover the biscuits. Don't completely seal around the skillet.
- Place cast iron skillet on a gas burner, and cook on low heat for 10 minutes; if you feel that they are burner on the bottom, you can rotate the skillet some on the burner
- Remove from burner and allow to cool some, then add the icing
- Make the blueberry syrup while you are allowing the biscuits to cool.
- Add 1 cup of water, 1 cup of blueberries, and 1 cup of sugar to a medium sized saucepan. Cook on medium-high heat, stirring on and off to make sure it doesn't stick.
- Once it comes to a boil, lower heat to a simmer and cook for about 5 more minutes.
- Serve the blueberry biscuits with the blueberry syrup on top!

All I have to say is this recipe will remain even after our electricity returns, which actually happened this afternoon! Happy happy girl and family right now! My heart is still with all of those who are dealing with the aftermath of Hurricane Ida, and the destruction she brought to so many in our Louisiana communities. We will remain #LouisianaStrong.
