When the oven is out of commission, you bake an Instant Pot Cake Trifle.
Here is how the Instant Pot Cake Trifle came into play yesterday. This week has been a bit of a disaster. Ok, I know it is only Wednesday, but it feels like it should be days later. We were one of the lucky ones (insert sarcasm) that lost electricity during the hit of the winter ice storm in Louisiana. I had already planned to bake a cake for a Mardi Gras themed trifle dessert. The no power wasn’t going to interfere with my plans.
I grabbed the Instant Pot and plugged it into a loving generator, and go to baking. Well, sort of. If you have wondered if you could bake a cake in an Instant Pot, then this Instant Pot Cake Trifle recipe is for you!
No better way to celebrate Mardi than with a dessert.
Mardi Gras has been such a bust this year with the cancellation of all the parades and big celebrations of Mardi Gras. It wasn’t going to stop all of Louisiana from finding ways to keep the tradition going. We made a point to celebrate yesterday even with no electricity!
I had never baked a cake in the Instant Pot until now. It never crossed my mind to even attempt it since I have a stove. The no electricity this week led to the no working stove which in turn led to me attempting to bake a cake in the Instant Pot. I went back and forth between using the Crock Pot and the Instant Pot. Since I wasn’t doing a dump cake, I went with the Instant Pot. Here is my thoughts on that in this Instant Pot Cake Trifle recipe.
Baking with the Instant Pot.
I did a lot of researching before I attempted using the Instant Pot for baking. To be honest with y’all, I get a bit nervous every time I use it. Am I alone? I got the Instant Pot down and made sure it was safe to use: all things attached that needed to be attached. For the cake recipe, I used a good ol’ Pillsbury White Cake Mix. I then added eggs, vegetable oil and milk instead of water.
Once it was all mixed well with a whisk, I added it to a cake pan. The addition of the milk gave this cake a more cake ball texture and flavor. This was quite all right since I was only using this cake as a layer in the trifle. Another thing to note with using the Instant Pot is that if you have an ornery one, like I do, then you may get a bunch of “food burning” warnings even though there is nothing burning. I just had to cancel and restart it.

This cake trifle is so good. It is like a cake pop dream. The bottom layer is broken up cake, with a layer of vanilla pudding, a layer of vanilla pudding and Reddi Wip, and a finally layer of Reddi Wip and sprinkles. Yellow, purple, and green sprinkles to be exact. Make sure to let the cake layer cool completely before adding it to the dish. You don’t want the Reddi Wip to melt and make a big ol’ mess. Alright, now for the recipe!
- 1 box of white cake mix (Pillsbury)
- 3 eggs
- 3/4 cup of vegetable oil
- 3 cups of milk (2 for pudding, 1 for cake)
- 1 box of vanilla pudding
- 1 can of Reddi Wip
- Sprinkles: yellow, purple, and green
- Prep the cake batter. Add dry cake mix, 3 eggs, vegetable oil, and milk to a bowl and mix well with a whisk.
- Spray a cake pan with a non-stick spray. Pour the batter into the cake pan and cover it with aluminum foil. I used a 8" deep pan.
- Add 1 cup of water to the Instant Pot insert. This will help to keep from getting the 'Food Burned' message as well as steam cook the cake better.
- Place the cake pan on the trivet and carefully place it inside of the Instant Pot.
- I have the Instant Pot that has the 'Cake Setting'. Press is and adjust cook time to 40 minutes. Also make sure the pressure setting is on LOW.
- Once the cake is done cooking, allow for natural pressure release.
- While the cake is cooking, prepare the vanilla pudding according to the instructions on the box.
- Remove the cake from the Instant Pot, and allow it to fully cool before handling.
- In a 11x9 dish, break up the cake. I did this with a spoon. Then add 1/2 of the vanilla pudding on top, followed by the rest of the vanilla pudding with Reddi Wip.
- Top it all off with a layer of Reddi Wip and colored sprinkles!
- Cover the trifle and place in the refridgerator for at least 30 minutes.
