Coffee Recipes and Finding Energy During the Summer

First off, where is my coffee? The summer months come with lots of fun and the need for more energy to keep up with kids who are out of school as well as all the camps and team practices being held. How is one to find the necessary energy to keep up with all of this madness? Well, here is a few tips that are helping to keep me trucking along with all that is scheduled.

This phrase has more than one meaning for me this summer. With swim team practices most mornings, swim meets, fun camps, 3 active kids, and hours spent at the pool, one not only feels the need to keep swimming in that chlorinated pool. I have to dig deep and find the drive to just ‘keep swimming’ with the madness of each day. Finding that necessary energy during the summer months seems much more difficult due to the lack of a structured routine. Summers are meant for fun but some things must give so that we all survive.

So how do we do this?

Find time to chill.

Yep, you are hearing me right. You have got to find that time to just chill. By taking time to relax and do something for yourself, you will find a way to have that extra energy. There is something about some self care time that mentally prepares me for each day, giving way to some energy. This can be anything from reading a book or going for a quick run. It is hard to find that chill time with kids at home, but you must make it a priority. Give those kids their quiet time, like reading a book or coloring. Then you get to your self care time!

    Finding energy during the summer can extremely difficult but I run on coffee! Chameleon Cold Brew looks like a great choice!

Poppyseed Dressing :: 
1 1/2 cups vegetable (canola) oil
3/4 cup white vinegar 
1 cup granulated sugar
2 tablespoons orange juice
2 teaspoons dry mustard
1 tsp salt
2 tsp poppyseeds

Mix these ingredients up and add to the salad!

Summer Berry Salad ::

Baby Spinach leaves :: 4 cups
Red Onion (1/4 - 1/2 cup, diced)
Strawberries :: 1/2 lb (~6 strawberries cut in slices)
Blueberries :: 1/2 cup
Blackberries :: 1/4 cup
Feta Cheese :: 1/2 cup
Croutons :: 1 cup
A spicy pasta recipe that is so good! Maddy DeVita A spicy pasta recipe that is so good! Maddy DeVita knew what she was doing with this Spicy Tomato Tagliatelle as did @seventhgeneration with their Clementine Zest & Lemongrass Dish Soap, 95% Biobased Formula. It helps tackle grease WITHOUT all the extra effort. Giving more time to delicious meals and family time and not extra when it comes to cleaning! 

What you need:
1/2 pound egg tagliatelle
3 tablespoons tomato paste
1/2 teaspoon red pepper flakes (or more if you’re feeling bold)
4 large garlic cloves, thinly sliced
3 tablespoons extra virgin olive oil
1/4 cup finely grated parm, plus more for topping Kosher salt, as needed

What you do:
Bring a large pot of well-salted water to a boil (don’t be shy - this is your pasta’s only chance to season itself properly). Cook the tagliatelle until 1 or 2 minutes shy of al dente, following package instructions.
• While the pasta cooks, warm the olive oil in a large skillet over medium-low heat. Add the garlic and red pepper flakes and let them gently sizzle until fragrant and beginning to brown, about 3 minutes.
Remember, as Nonna would say, “DON’T let the garlic burn!”
• Add the tomato paste to the skillet. Break it up into the oil and fry for about 2 minutes until it deepens in color and gets a little caramelized- this step is key for building the rich flavor of our sauce, don’t skipl
• Add a ladle of pasta water to the skillet and whisk, scraping up any caramelized bits, until a smooth sauce forms.
When the pasta is 1 or 2 minutes shy of al dente, use tongs to transfer the pasta straight from the pot. Toss over medium heat for 1 to 2 minutes, adding more pasta water as needed, until the pasta has finished cooking and the sauce has thickened up around the pasta.
• Turn off the heat, then stir in the parm until it melts into the sauce like it belongs there (because it does).
• Serve immediately. Try not to eat it straight from the pan... but no promises.

* 1½ pounds chicken thighs ( 4 chicken thighs)
