Looking at you, easy corned beef sliders.
I honestly didn’t know how much I loved corned beef until these sliders. The combination of the corned beef and the dijon mustard with mayonnaise plus the Hawaiian rolls is so good! Believe me, you are going to want this recipe for get togethers. A quick and easy appetizer that can be planned a head of time.
The brining process really is not difficult.
Another first for me with this recipe was brining. I had never brined brisket before. I think the hardest part of it was pouring the brining liquid into the bag with the brisket. Seriously. I easily found these ingredients in my spice cabinet. I also bought a brisket that was already trimmed, so didn’t have to worry about that.
You can also note that you don’t have to seal it in a plastic bag like I did. You could honestly put it in a large tupperware or a large ziploc bag. I know how my kids can be, and I wanted to make sure that this bag would not bust open.
Assembling the sliders.
Assembling the sliders is just as easy as preparing the brisket. With only a few ingredients, you will have the most delicious sliders. I decided not to put any ‘veggies’ on my sliders, but you are more than welcome to add your own spin to these. I kept them super simple so that they would be approved by the tiny army that inhabits my house.
And my plan worked. My kids love these sliders, stretchy swiss cheese and all.
Easy Corned Beef Sliders
Love corned beef? Even if you don't, you will love these easy corned beef sliders. They are so good and great for bring to a group gathering!
Ingredients
- FOR CORNED BEEF
- 1 (5 to 6 pound) beef brisket, trimmed
- 1 small yellow onion, quartered
- 3 large carrots, tops cut off
- 4 celery stalks, coarsely chopped
- 1/2 cup of brown sugar
- 1 cup of salt
- 1 cinnamon stick, broken into several pieces
- 2 teaspoons of mustard seeds
- 2 teaspoons of black peppercorns
- 1/2 teaspoon ground ginger
- 8 whole cloves
- 2 bay leaves, crumbled
- 2 quarts water
- 1 quart of ice
- FOR SLIDERS
- 1 (12 pack) of Hawaiian Rolls
- 3 tablespoons Dijon Mustard
- 1/4 cup of Mayonnaise
- 8 slices of thinly cut creamy swiss cheese
Instructions
- Place the water in a large stock pot along with the sugar, salt, cinnamon stick, mustard seeds, peppercorns, cloves, bay leaves and ginger. Cook over high heat until the sugar and salt dissolve. Then remove from heat and add the ice and stir until the ice has melted.
- You want to bring the temperature of the liquid mixture down to 45 degrees so that the brisket can be added to it without cooking it.
- Once it has cooled, you will add the brisket and the liquid to a large sealable plastic container and place it into the refrigerator for 7 days. Check daily to make sure that the beef is completely covered by the brine. You may want to flip if if necessary.
- After 7 days, remove the brine and rinse the brisket well under cool water. Then place it into a a large pot big enough to hold the meat, onion, carrots and celery. Then add with water so that the meat is covered up to practically the surface.
- Add the onions, celery and carrots and set over high heat until the water comes to a boil. Reduce the heat to low, and cover. Gently simmer for 2 1/2-3 hours or until the meat is tender with a fork. Remove pot from heat.
- Remove the brisket from the pot and thinly slice across the grain. Now time to prepare the sliders.
- Preheat the oven to 375. Spray a 7x9 glass casserole dish lightly with nonstick spray.
- Cut the Hawaiian rolls in half and place the bottom half into the dish.
- Next, mix up the mayonnaise and dijon mustard in a small bowl. Spread a generous amount onto the bottom half of the sliders.
- Layer the corned beef slices, putting as much as you want. I added 2 layers of the corned beef.
- Add the swiss cheese slices over the corned beef slices, overlapping the sides.
- Lastly, generously spread the sandwich dressing onto the inside of the top pieces of Hawaiian rolls.
- Place them on top of the rest of the cheese layer. Then cover the entire dish with foil.
- Place in oven and bake for about 20 minutes to heat up sandwiches and melt the cheese.
- Remove from the oven and allow to cool for 5 minutes before cutting them.
- Enjoy!
