Meal prepping with this Keto Crunchwrap Supreme.
Hello April! The weather is finally on a roll of being nice, aka not too cold, and we are thinking about all things outdoors. Spring Break is this week for us. We are actually about to head out the door for a quick little beach trip to get away for 3 days. This didn’t stop me from preparing one of my first meal prep recipes: Keto Crunchwrap Supreme. Keep reading to see what all is going on in our kitchen!

Why Keto?
A lot of y’all are probably wondering two things right now: why is she making this keto and how in the world is this a meal prep?! Okay, let me get to answering these questions! First off, no one in our family has dietary or allergy restrictions. I am very thankful for this. We are wanting to incorporate more keto-friendly meals and snacks in our home because it is much needed. The sugar overload is at an all time high right now, meaning lots of roller coaster behavior and afternoon energy crashes.
My son has epilepsy, absence seizures. The seizures aren’t your typical tonic seizures where your body has involuntary muscles contractions. His seizures are more ‘staring spells’. He completely zones out and then comes back to once his seizure is over with. Medication has helped keep these under control for the most part, but he still has breakthrough seizures when he is tired. His neurologist recommended that a lower-sugar diet, aka keto, could possible help him.

So here we are, incorporating more keto-friendly meal options in our home! We are going ALL IN, but we are going to try to maintain this healthy balance.
Meal prepping isn’t hard.
Now for the meal prepping question at hand. Meal prepping isn’t difficult, but it does take time and planning. If you know what you want to cook that week for dinner, then you can quite possibly meal prep! Meal prepping not only can save you money, but it will save your sanity during a busy week. For this week, we will be heading to the beach, so I did a quick meal prep yesterday.
I am saving the rest of the cooked ground meat for when we get back for a keto lasagna. So how did I meal prep? I knew that I wanted to prepare 2 dishes this week that contained ground meat. We do eat leftovers over here. If you aren’t a left over kind of person, you would just divide this meat portion up between 5 different meals instead of 2.
I bulk cook whatever my meat ingredient is. Yesterday, I bulk cooked the ground meat. Then before adding the taco seasoning for the keto crunchwrap supreme, I removed the meat for the lasagna. Store that left over meat in an airtight container in the refrigerator for up to 5 days. All lot of the produce needed can also be prepped, washing and dicing. Store it all in the refrigerator until you need it,up to 5 days.
Enough of my chatter! Let’s get to the recipe!
Keto Crunchwrap Supreme, Meal Prepping

Looking for ways to be healthy while meal prepping? This keto crunchwrap supreme recipe is more than delicious and easy! You can prep for these and another ground meat meal for later in the week.
Ingredients
- 1 lb of ground meat
- 1 head of cabbage
- 1 cup of sour cream
- 1 cup of low-carb cheese sauce
- 2 cups of shredded mild cheddar cheese
- 1 tomato
- taco seasoning
- *If you are cooking this for meal prepping, I would purchase at least 2 pounds of meat to bulk cook*
Instructions
- Preheat the oven to 400.
- Wash and dice up the tomato, set aside
- Start browning the ground meat on med-high heat. After about 8-10 minutes when the meat is fully cooked, take out any bulk meat you may have cooked (only need 1 lb for this recipe)
- Add 3/4 cup of water and taco seasoning to meat, stir and allow to simmer for another 4 minutes
- Prep the cabbage: rinse of the cabbage and de-core it. This will help with the removal of the leaves. If you can remove any of the leaves easily, do some now. You can also wait until after you steam the cabbage.
- Fill a large pot half full with water, and bring it to a boil. Place the cabbage into a strainer and place it in the pot. Allow the cabbage to steam for about 6-8 minutes or until the leaves are more tender.
- As soon as the oven has preheated, you can prepare the cheese tostados. Sprinkle a saucer-shape of shredded cheese onto a parchement paper lined cookie sheet. You will need 5-6 of these.
- Bake the cheese tostados for about 6 minutes or until the cheese is beginning to brown. Allow to cool completely before handling.
- Time to assemble! Place 3 cabbage leaves overlapping some down. Add a dollop of cheese sauce in the middle of the cabbage leaves, followed by taco meat, a cheese tostado, sour cream, diced tomatoes, and shredded cheese. Carefully fold the cabbage leaves inward, tucking them in.
- Lastily, slice the cabbage crunchwrap in half! Enjoy!
- The remaining cooked ground meat can be used for a dirty rice (with cauliflower rice) or even a keto-friendly lasagna-recipe coming soon!

These keto crunchwrap supremes are an easy meal that can be prepped ahead of time. I would wait and steam the cabbage right before you plan to eat. Everything else can be ready to go!
