There is nothing like these no bake chocolate oatmeal cookies.
If you were to ask me what my favorite dessert was, I would probably struggle with picking just one. Now if you were to ask me my favorite cookie and one that includes oatmeal, it wouldn’t take me long to answer. These No Bake Chocolate Oatmeal Cookies are hands down my favorite! They are almost like a Reese’s cup. So good y’all!
Easy recipe, but timing is everything.
This is truly an easy recipe. It only consists of sugar, cocoa powder, oatmeal, peanut butter, milk, and a stick of butter. You don’t even have to bake these cookies. It is all heated on the stove top and cooled as cookie dollops. They will set within minutes.
The thing about these cookies is that timing is everything. I even set a timer to make sure I don’t under cook or over cook these cookies. If you under cook them, they will be too gooey. If you over cook them, they will be too dry and crumbly. Believe me, it really does make a difference. Another tip to make the process smooth is to measure everything before hand!
Peanut butter and chocolate are my friends.
Another great thing about these is my two friends are included: peanut butter and chocolate, aka cocoa powder. The combination really is mouthwatering. When I say these cookies remind me of a Reese’s, I am not kidding! Since you are using a quick-cook oatmeal, it is not a huge texture issue. These cookies are great for any occasion and any time of the day. I may or may not enjoy these for breakfast, just saying!
No Bake Chocolate Oatmeal Cookies
These No Bake Chocolate Oatmeal Cookies are melt in your mouth good. These cookies remind me of Reese's cup, so good! Easy and quick, these cookies will be your new favorite!
Ingredients
- 2 cup granulated sugar
- 1/2 cup milk
- 1 stick of butter, unsalted
- 4 tbs. cocoa powder
- 1/2 cup peanut butter (creamy)
- 1 tsp vanilla extract
- 3 cups quick-cook oatmeal
Instructions
- In a medium saucepan, add 1 stick of butter and melt on medium-high heat.
- Once butter melts, add sugar, milk, and cocoa. Stir ingredients and bring to a boil.
- Once at rumbling boil, boil for only 1 1/2 minutes: VERY IMPORTANT
- Remove from heat immediately and add peanut butter, vanilla extract, and oatmeal.
- Stir well and drop by spoonfuls on parchment paper. Cookies she harded within 5 minutes.
