As a mom of three, I have to keep a round-up of which recipes work best for my family. The busy schedule during the week makes it practically impossible to spend time worrying about what dish to cook next. Having at least one recipe that fits the bill is a life saver, both for my sanity and my budget. If you are looking for a way to feed your family with a home cooked meal that is perfect for saving money, then you need to check out this ramen shrimp bowl recipe.
All ingredients were picked up at the local store. The total for all of these ingredients comes out to be around $14, bringing the dish to about $3/serving. This recipe is quick, easy and a family favorite: kids included!
Another great thing about this dish is that the options are endless. You can substitute the shrimp out for beef or chicken without altering the total price per serving too much. Maybe you want a little more spice? You can easily add crushed red peppers to the dish to give it that extra kick.
So how easy is the recipe?
So how easy is the recipe? I would say it is one of the most easiest recipes I have done that is considered home cooked. You basically cook all the ingredients at the same time. While you are bringing the chicken stock to a boil, you can melt the butter. The 3 peppers and onion blend/shrimp are cooking while the ramen noodles are cooking. Once everything is done, you toss it all together in a bowl. That’s it! A budget-friendly meal that is quickly done in under 20 minutes. Quick and Easy Ramen Shrimp Bowls
If you are looking for a quick, easy, and delicious meal that will feed the entire family, then this Ramen Shrimp Bowl recipe is for you! It is on the table in under 30 minutes. Perfect for those on a budget as well: about $3/serving!
Ingredients
- 1 12 oz Peeled and deveined small shrimp You can go with 1 lb of peeled and deveined med-large shrimp ($7-$8) for larger shrimp
- 4 packs Ramen Noodles
- 2 tbsp Soy Sauce, Low-Sodium
- 1 tbsp unsalted butter
- 2 cups 3 Pepper and Onion Blend (Frozen)
- pepper to taste No need to add extra salt due to the broth and soy sauce being added
- 6 cups chicken stock or broth
Instructions
- If shrimp are frozen, place the bag into the sink to allow to thaw. If you are crunched for time, open bag of frozen shrimp and pour into a strainer. Run COLD water over the shrimp to help separate them and set aside until ready to cook.
- Pour the chicken stock (broth) into a large pot and bring to a boil.
- Once the chicken stock comes to a boil, add the ramen noodles. Cook for about 5-6 minutes or until the ramen noodles have become soft and stretchy. Remove from heat and drain. Lightly rinse of the ramen noodles with water.
- While you are bringing the chicken stock to a boil, prepare the veggies. Place 1 tbsp of butter into a large skillet. Melt the butter on medium heat.
- Once the butter is melted, add the 3 Peppers and Onion blend to the skillet. Stir occasionally to make sure all the veggies are cooking evenly. Saute for about 5 minutes or until the veggies are tender and the onions are beginning to become translucent.
- Now add the shrimp to the veggie mixture. Stir in the shrimp and cook for another 3 minutes or until the shrimp are fully cooked-pink in color. Add soy sauce and stir to make sure veggies and shrimp are mixed well in soy sauce. Cook for another 1-2 minutes, and remove from heat. You don't want to overcook the shrimp because they will become rubbery in texture.
- Place about 1 cup of the cooked ramen noodles into a bowl and top with about 1/4 of the shrimp and veggie mixture. Enjoy!
Notes
This recipe can be altered! Not sure about the shrimp? Substitute for chicken or even beef. You can also add a little spice to this dish by adding crushed red peppers during the soy sauce addition step. The options are endless with this quick and easy ramen shrimp bowls!
