Christmas Cookie baking must include these soft and chewy Grinch style snickerdoodle cookies!
I have said it already, but I love this time of year and all the holiday baking that comes along with it. Baking is something I love to do all the time. The Christmas season just makes being in the kitchen more magical! We love us some cookies in our home, especially a good snickerdoodle cookie. Here is our fun festive twist on the classic cinnamon and sugar cookie: Soft and Chewy Grinch Style Snickerdoodle Cookies.

When it comes to these cookies, they are even better when they are soft and chewy! Love the texture and flavors that a good snickerdoodle cookie brings! When you make sure they are dropped in rounds onto your prepared cookie sheet, you will have cookies that will be more thicker in the middle. This gives way to a more soft and chewy cookie- yes please!
These snickerdoodle cookies did not spread too much for me. If you are worried about the spreading, make sure the dough is more chilled before you bake it- pop the dropped dough rounds in the refrigerator for a few minutes before baking.
The Grinch.
The Grinch has been apart of the holiday season for as long as I can remember. His bright green fur and the most important part, his heart! I love how not only the colors represent Christmas with the red and green, but the fact that the heart represents there is a bigger meaning to Christmas. It was easy to put this little Grinch spin onto this classic snickerdoodle recipe!

THe Grinch
It was easy to add this Grinch style to these cookies. I grabbed a bag of green colored candy melts (got these on sale at Michaels) and a small container of candy hearts. Your cookies have to be completely cooled before doing the green melt dipping. Take your cookie, and only dip it in half way into the melted green melts. Then quickly add your candy heart. That is it!
Soft and Chewy Grinch Style Snickerdoodle Cookies
These Soft and Chewy Grinch Style Snickerdoodle Cookies bring it all when it comes to cookies this holiday season. The cinnamon and sugar cookie goes perfectly with the dipped green chocolate.
Ingredients
- 3 1/4 cup of all purpose flour
- 1 cup butter, softened
- 2 eggs
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 2 tsp vanilla extract
- 1 tsp baking soda
- 3/4 tsp salt
- 1 1/2 tsp cream of tartar
- 1 tbsp cinnamon sugar
- FOR COATING:
- 1/3 cup sugar
- 1 1/2 tsp cinnamon
- 1 bag of green chocolate candy melts
- 1 container of candy hearts
Instructions
- Preheat oven to 350. Line two cookie sheets with parchment paper or silicone baking mats.
- Cream the butter first. Then add the sugars to the bowl. Cream until the mixture is fluffy, about 1-2 minutes.
- Add the eggs, vanilla and mix until smooth. Next mix in the baking soda, cream of tartar and salt. Mix until combined.
- Now add the flour. Mix until the dough forms. You don't want to over mix because that will give you a not so soft cookie.
- In a small bowl, mix the sugar and cinnamon for the coating.
- With a cookie scoop or a spoon, take about 2 tablespoon balls of cookie dough and create a ball. Roll them in to the cinnamon and sugar mixture. Then place about 2" apart on the cookie sheet.
- Bake for about 10-12 minutes, or until the cookies are a little cracked on the tops. I don't wait until I see the browned edges.
- Allow the cookies to fully cool, about 15 minutes.
- Once the cookies have cooled completely, you can now give them that Grinch touch. Melt half the bag of chocolate melts, according to the bag.
- Dip half the cookie into the melted green chocolate and place back on teh parchment paper. Quickly add the candy heart to the green chocolate before it hardens.
- Store cookies in an airtight container for up to 3 days or freeze them for up to a month.

You don’t have to be a baker to enjoy making these cookies. Take this time to enjoy the time in the kitchen. Get the kids making these with you! My 6 year old and 11 year old both helped me bake these cookies. If you feel pressed for time to bake the and decorate them all in the same day, make the dough balls first. Pop those into the freezer until you are ready to bake them. Then continue with the rest of the steps. An easy snickerdoodle recipe that will have you all making memories together.
