All about spring and these spring pinata cupcakes.
As soon as the month of March arrived, I was all ready to welcome spring. I may be off a little with that timeline. I was actually ready for spring early last month. Spring means that the warmer weather will soon be on its way to stay for a bit as well as new beginnings. It was no wonder that I had to create these spring pinata cupcakes this week!
Cupcakes with a little surprise.
I have been wanting to try out a dessert recipe that included that fun surprise factor with the pouring out of candies when you cut into it. When I figured out I wanted to do a spring-inspired cupcake, I decided to take this opportunity to try out a pinata cupcake!
These cupcakes are actually easy to make! I thought I would need special kitchen tools to create the perfect stuffed cupcake, but that is not the case.

There are times when we don’t have the time to make delicious cupcakes from scratch. I love these spring pinata cupcakes because they use a box of cake mix as well as a container of frosting. Every part of these cupcakes was picked up from our local Target, even the 3 tiered stand! I am adding all of the items I used below so that you can quickly add them to your Target cart.
The sprinkles, frosting, and fun toppers are perfect for any spring-inspired dessert. The sprinkles that come with the frosting are perfect with the topping theme too!
Spring Pinata Cupcakes
Spring is right around the corner, and these cupcakes are all about it! These spring pinata cupcakes bring all the great aspects of spring as well as a fun spring sprinkle mix surprise when you bite into them.
Ingredients
- 1 box of white cake mix (I used Betty Crocker Super Moist White cake mix)
- 1 container of Pillsbury Spring Themed Frosting
- 3 eggs
- 1/2 cup of vegetable oil
- Blue food coloring
- Edible Green Grass
- Spring Sprinkles Mix
- Cupcake Liners
- Bunny and Chick Icing Decorations
Instructions
- Preheat the oven according to cake mix box; I preheated it on 350.
- Prepare the cake mix according to the cake mix box.
- Add about 12 drops of the blue food coloring into the cake batter, and mix well.
- Prep the cupcake pan with the cupcake liners.
- Fill each cupcake tin 3/4 full of the cake batter.
- Bake the cupcakes for about 16-20 minutes
- Remove from the oven and allow to fully cool before moving to the next step.
- With a kitchen butter knife, cut about a 1" piece out of the center of the cupcake. Make sure to not go all the way through the bottom of the cupcake. Save these pieces to use later.
- Fill each whole with the spring sprinkles mix.
- Cut the top off the piece of the center pieces and stuff the very top part into each hole of the cupcake holes.
- Now for the frosting part. I like to put the entire tub of storebought frosting into a gallon ziploc bag. Make sure to get all the air out, and zip closed. Cut a small tip of the end and squeeze the frosting out from the bottom up. I went in a spiral direction.
- Top each of the cupcakes with the edible green grass, the sprinkles that came with the frosting, and the icing decorations.

Those cupcakes are super cute. I’ve made Easter cupcakes last year but I never thought of adding goodies in the middle. I’ll have to give it a try and surprise my kids with them. I’ll just have to find a sprinkle alternative because they don’t like sprinkles.
