The Simple Life

The simple life….when life has us running around like crazy, driving in rush hour traffic (or any time of day traffic around these parts), and chaotically trying to make it to all events and occasions imaginable, getting back to the simple life is such a breather. My family is on our way to the mountains for a family vacation. As we make the adventurous long road trip, we decided to take a pit stop at my  mom’s house in northern Mississippi. Y’all, I am a Mississippi girl thru and thru..Mississippi girl living in Louisiana.

Sweet tea lovin’, mustard green eatin’, and running around barefoot country girl I am. Me and the country just love each other…I have the fondest memories of climbing trees and catching as many lightening bugs as I could manage into an old glass pickle jar. Then I had to grow up, go off to college, get married and have kids. This life of course is better than I could have ever planned for my self, thankfully His plan is always better than our own! I go through each day, blessed beyond belief. Kids busy in all sorts of activities, and I happily follow through each and every activity, every day. Then I get to a point where I crave for the simple things.

I crave for the chance to sit back and drink a glass of sweet tea while watching my kids run around like the kids they are meant to be. Don’t get me wrong here…I can do these things at home, in my cookie cutter neighborhood. I can do these things with great joy from a patio chair or from the windows that look over our fenced in backyard. There is something about getting away from this fenced in yard and stretching out in the open land. A place where you can acknowledge the beauty of all things God created in its untouched state with no interruptions. This here is that part of a country girl that you can’t ever take away, no matter how long she lives in the confines of a busy town or city.

So here we are, visiting in Mississippi. The country part of Mississippi to be exact. As I begin to feel giddy inside about the time I can spend with family, the land in itself is just as happy to greet us.  The kids are running around a yard that isn’t fenced in, surrounded by corn fields and wooded areas that give the land somewhat of a boundary that we normally only see from the car. As the sun starts to fade from the horizon, I look over at my daughter to see her face lite up as if she saw Santa Claus or even a magical unicorn. She runs under a tree and begins to clap her hands to grasp something in front of her. Curious to what has caught this sweet girl’s attention, I watch her intently. Lighting bugs…..

Lightening bugs are beginning to surround us with their luminescence. These simple little insects can put on the most amazing light show. As Ryleigh continues to chase them, I quickly run a glass pickle jar to her. I feel as if I have just taken a quick train ride back in time to when I was doing the exact same thing…chasing after the glowing bugs and keeping them just for the night to have them put on one last show before I close my eyes for bed. Ryleigh quickly grabs the jar and is dashing around in circles, making a point to not accidentally skip over one lightening bug. Her jar reached it’s maximum capacity in the matter of seconds.

Those lightening bugs went EVERYWHERE Ryleigh went…she even attempted to sleep with them, sweet girl. As I laid down from the day before, I looked back over all that had happened during the day. I realized how good it all felt to be ‘free’ from the confines of everyday things. Being able to see my daughter’s face, a face of pure joy from the simplest thing-a lightening bug, is something that brought joy to my own heart. Taking this time to truly be in awe of all that God created in it’s truest form and being reminded of how amazing He is. I know tomorrow will come soon enough. I will have to say goodbye to this life of simplicity, but it was time well spent. For it will carry me through the rest of the busy year until I can meet it again.

Mississippi girl, country girl, or even the girl who has lived in the confines of the busy city life, getting a chance to step away to a life of simplicity is oh so good for the heart. Whatever your ‘simple’ life may be, find time to visit. You and your child will be blessed each and every time.

    I am a huge advocate of simple living – without it I don’t know where I would be. It’s hard to switch off but boy is it worth it! Good job?

    Love this post. Lightening bugs totally made my day 🙂 when we lived in the country kids were always making nightlights during the summer with mason jars. I swear theres like 5 lightening bugs in the summer in town. I keep telling my other half someday we gotta move into the country. Not that we live in a huge town but I definitely miss sitting on porch watching the stars at night and the quiet country life.

    I am so with you! Reading this made me a bit nostalgic for Virginia. We lived there for 4 years and my husbands grandfather owns a lot of land. Some of our best memories.

Summer Berry Salad with an orange poppyseed dressi Summer Berry Salad with an orange poppyseed dressing that is 👏🏼 Y’all forreal. ❤️🤍💙

Poppyseed Dressing :: 
1 1/2 cups vegetable (canola) oil
3/4 cup white vinegar 
1 cup granulated sugar
2 tablespoons orange juice
2 teaspoons dry mustard
1 tsp salt
2 tsp poppyseeds

Mix these ingredients up and add to the salad!

Summer Berry Salad ::

Baby Spinach leaves :: 4 cups
Red Onion (1/4 - 1/2 cup, diced)
Strawberries :: 1/2 lb (~6 strawberries cut in slices)
Blueberries :: 1/2 cup
Blackberries :: 1/4 cup
Feta Cheese :: 1/2 cup
Croutons :: 1 cup
A spicy pasta recipe that is so good! Maddy DeVita A spicy pasta recipe that is so good! Maddy DeVita knew what she was doing with this Spicy Tomato Tagliatelle as did @seventhgeneration with their Clementine Zest & Lemongrass Dish Soap, 95% Biobased Formula. It helps tackle grease WITHOUT all the extra effort. Giving more time to delicious meals and family time and not extra when it comes to cleaning! 

What you need:
1/2 pound egg tagliatelle
3 tablespoons tomato paste
1/2 teaspoon red pepper flakes (or more if you’re feeling bold)
4 large garlic cloves, thinly sliced
3 tablespoons extra virgin olive oil
1/4 cup finely grated parm, plus more for topping Kosher salt, as needed

What you do:
Bring a large pot of well-salted water to a boil (don’t be shy - this is your pasta’s only chance to season itself properly). Cook the tagliatelle until 1 or 2 minutes shy of al dente, following package instructions.
• While the pasta cooks, warm the olive oil in a large skillet over medium-low heat. Add the garlic and red pepper flakes and let them gently sizzle until fragrant and beginning to brown, about 3 minutes.
Remember, as Nonna would say, “DON’T let the garlic burn!”
• Add the tomato paste to the skillet. Break it up into the oil and fry for about 2 minutes until it deepens in color and gets a little caramelized- this step is key for building the rich flavor of our sauce, don’t skipl
• Add a ladle of pasta water to the skillet and whisk, scraping up any caramelized bits, until a smooth sauce forms.
When the pasta is 1 or 2 minutes shy of al dente, use tongs to transfer the pasta straight from the pot. Toss over medium heat for 1 to 2 minutes, adding more pasta water as needed, until the pasta has finished cooking and the sauce has thickened up around the pasta.
• Turn off the heat, then stir in the parm until it melts into the sauce like it belongs there (because it does).
• Serve immediately. Try not to eat it straight from the pan... but no promises.

* 1½ pounds chicken thighs ( 4 chicken thighs)
* Seasoned chicken with Trader Joe’s 21 Seasoning Salute
* 2 teaspoons salt ( for rice)
* 2 tablespoons olive oil
* 1/2 cup season blend
* 1½ cups long-grain white rice (jasmine rice)

Summer snack/lunch hack? Yes please! I had to give Summer snack/lunch hack? Yes please! I had to give this recipe idea a try, and it didn’t disappoint! Also FORGOT to mention the diced purple onion that I added 🫣

*1 1/2 chicken breasts, cooked and cut into bite size pieces
*2 tbsp diced purple onion
*3 heaping spoonfuls of plain Greek yogurt (~1/4 cup)
*3 tbsp of salsa
*~ 1/2 pack of ranch seasoning ( used spicy 🌶️)
*~1/2 cup shredded cheese (used 3 cheese blend)
Mixed up in a small baking dish and topped with more cheese.
Baked at 350 for about 15-20 minutes, enough time to warm it up and melt that cheese!
