I am all for a recipe that I know will always be a hit with my family, especially my kids. This family approved keto lasagna is one of those recipes! My son begs for this keto lasagna at least once a week. It is also a great meal that you can prep ahead of time. I normally prep it the day before. Then I can quickly pop it in a preheated oven. See for yourself why we love this recipe so much.
Don’t let the words ‘keto’ fool you. This recipe is so good!
I know the words ‘keto’ can make some of you shutdown. Anytime we hear that something is healthier or better for us, flavor can be altered. That is not the case with this dish. It is more than flavorful, and you would never guess that it was as keto recipe.
It is all about the noodles.
The noodles in this lasagna is what makes it keto. I honestly was not sure about these noodles at first. These keto noodles are made of cream cheese, egg, and shredded mozzarella/italian cheese. That is it! You know what? They really do resemble noodles after baking.
The key to making these noodles is making sure the cream cheese is completely softened. I even put it in a microwave safe bowl and heat up a little. The softer the better. You are going to have to spread out the noodle mixture onto a parchment paper lined cookie sheet, and you want it to be as easy as possible to spread.
Another important thing to note is the thinner you can spread it, the better. I also use a pizza cutter most of the time to cut these noodles once they are cool. Easy peasy!
Family Approved Keto Lasagna

Ingredients
- Meat Sauce:
- 1 lb of ground beef
- 1 28 oz tomato puree
- 1 28 oz crushed tomato
- 1 15 oz tomato sauce
- 1 tsp of salt
- 1 tsp of garlic powder
- 1 tsp of onion powder
- 1 tbsp of italian seasoning
- Noodles
- 2-8 oz blocks of cream cheese
- 2 cup of shredded mozzarella/italian cheese
- 1 egg
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp onion powder
- 1 tbsp italian seasoning
- Ricotta-cheese mixture
- 1 12 oz ricotta
- 1 egg
- 2 cups shredded mozzarella/italian cheese
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp onion powder
- 1 tbsp italian seasoning
Instructions
- Prepare the meat sauce so it can be cooking while you prep the rest of the parts of the keto lasagna.
- Brown the ground beef in a large pan. Remove all the excess grease.
- In a large pot, add the tomato sauce, puree and crushed tomatoes. Add the seasoning and stir. Allow to simmer while you cook and prepare everything else.
- Add the ground beef to the tomato sauce once it is done cooking.
- Preheat oven to 400.
- Prepare the noodles. In a medium-large microwave safe bowl, add the cream cheese. Make sure it is a soft as it can be. Then add the egg and mix well. Add the cheese and seasonings. Spread the noodle mixture out onto a parchment paper lined cookie sheet.
- Bake the noodles for 30 minutes or until the edges are browned.
- Remove from the oven and allow to fully cool before handling. Once cooled, cut in 12 long rectangular strips.
- Now prep the ricotta cheese mixture. In a medium-large bowl ( I use the bowl I used previously and have washed), add the ricotta cheese, egg, and cheese as well as all the seasonings. Mix well. Set aside until you are ready to assemble.
- In a 13x9 casserole dish, add a few spoonfuls of the meat sauce-enough to covere the bottom.
- Place 4 noodles down, then top with ricotta cheese mixture.
- Add sauce to the top then add shredded cheese.
- Start the layers all over!
- Once you use up all the noodles and ricotta, top with meat sauce and cheese.
- Cover with aluminum foil, and bake for 30 minutes.
- After 30 minutes, remove foil and allow to bake for an additional 10 minutes.
- Remove from oven and allow to cool before cutting.
- Enjoy!
