Cookies that the kids can decorate as well as ones we are able to gift to friends and loved ones. Did you know that cookies can be sweet and beautiful? The Hawaiian Shaved Ice Flavors (Cherry & Green Apple) and the Cotton Candy Express Sugars (Pink Vanilla & Lime) are used in the cookie dough as well as the stained glass ‘window’ and topping for these fun Christmas Grinch-themed cookies!
Switch it up with those Hawaiian Shaved Ice Flavors and Cotton Candy Express Cotton Candy Sugars!
These cookies were made with the Hawaiian Shaved Ice Cherry flavor and Cotton Candy Express Pink Vanilla flavor. These gave way to a more reddish-pink cookie. You can switch out these two flavors to the Hawaiian Shaved Ice Green Apple flavor and the Cotton Candy Express Lime flavor to give way to a more green cookie.
Then switch the cotton candy sugar that is used for the stained glass ‘window’! Such fun and beautiful cookies. As for the texture, these cookies are more of a shortbread consistency than chewy and soft. This helps the cookies hold their stained glass ‘window’ in place.
Grinch Stained Glass Shortbread Cookies
The holidays is for baking, and these Grinch Stained Glass Shortbread Cookies are a must to bake! The are festive and beautiful with their stained 'glass' sugary centers.
Ingredients
- 3 cups all purpose flour
- 1/2 tsp salt
- 3/4 cup granulated sugar
- 1/4 cup Cotton Candy Express Cotton Candy Sugar Pink Vanilla
- 1 cup unsalted butter, softened
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp Hawaiian Shaved Ice Cherry Flavor
- *1/8 tsp Cotton Candy Express Sugar Lime Flavor/Cookie
- 2 tbsp Cotton Candy Express Sugar Pink Vanilla Flavor for dusting cookie
Instructions
- Preheat oven to 350
- In a large mixing bowl, cream the butter and sugars together.
- Add the eggs, vanilla extract and Hawaiian Shaved Ice Flavoring, and mix until incorporated
- Add the flour and salt, and slowly mix until a a dough is formed-pulling away from the sides of the bowl.
- Remove the dough from the mixing bowl, and knead until you have a dough ball. Wrap in saran wrap or place in a plastic storage container and allow to chill in the refrigerator for at least 1 hour before rolling out.
- On a lightly floured surface, roll the dough out into about 1/2" thickness. You may find it easier to divide the dough in half, and work with 1/2 of the dough at a time.
- Using 1 large cookie cutter, cut out the main shape of the cookie; then place a smaller cookie cutter shape into the center of the large cookie cutter.
- Carefully remove both cookie cutters, giving way to 2 cookies, 1 cookie with a center cut out.
- Allow the cookie to chill in the refridgerator for about 5 minutes before baking. This will help keep the cookies from spreading.
- Before baking, sprinkle a light layer of the Cotton Candy Express Cotton Candy Sugar into the center of the large cookie cutouts. making sure that the sugar layer touches all sides of the inside of the cookie.
- Bake the cookies for about 8 minutes, or until the edges of the cookie begin to lightly brown.
- Allow to fully cool before removing from parchment paper, about 10 minutes.
- Keep cookies stored in an air tight container.
Notes
If you find that your cookies are baking faster than the sugar is able to melt, here is a quick alternative way to make those stained glass centers! Take the cookie sheet out and carefully remove the cookies, leaving the shaped sugar untouched. Add a little more sugar around the edges of the pre-shaped sugar and turn oven to broil. Allow the sugar to bake until the sugar is melted. Then quickly remove the cookie sheet, and place the cookies on top of the melted sugar. Add a little more of the sugars around the inside edges of the cookies to help seal the melted sugar to the cookies. Allow to fully cool before removing cookies from the parchment paper.
