Toddler-Approved Nutritious School Lunch

As I get last minute things together for my older kids’ first day of school, I have started prepping for my toddler’s school year: school lunches. I don’t know about y’all, but school lunch prep can drive me crazy. Trying to figure out what each will eat and what will actually stay good for when lunch time arrives. A soggy sandwich with crushed chips isn’t too appetizing of a lunch, don’t you agree? Well, you know how those toddlers can be when it comes to food preferences. Here are a few things that have not only been toddler-approved by my youngest, but are also nutritious!

Whew. I seriously do not look forward to figuring out what my toddler will eat, no matter the time of day. Even though she is not as picky as my other two, she can and will make things interesting when it comes to meal time. So how do I make sure, specifically, her school lunch is approved?

Make it fun!

I know we have heard this multiple times, but make it fun! Having things in her lunch that are colorful and fun-shaped is a plus. All my kids love it when they have a ‘fun’ lunch.

Food items they can hold easily.

Little hands need food items that they can hold without any problems. I love having food items in her school lunch that I know she can feed herself without any problems. My toddler also has that ‘I DO IT’ tendency. So it is a huge plus when she can ‘DO IT’ herself.

I mean, we all love foods that taste great. Toddler’s will turn away more food than adults when it comes to taste. I mean, this age seems to know it all, right?! Finding foods that I know are taste-approved is my advantage when it comes to school lunches.

Rollin’ with these King Cake Egg Rolls… Ingre Rollin’ with these King Cake Egg Rolls…

Ingredients:
4 egg roll wrappers
1- 8oz of cream cheese, softened (plus 1/4 block for topping)
1/2 cup powdered sugar
1/2 tsp ground cinnamon (plus 1/4 tsp for topping)
1/2 tsp vanilla extract

Mix the 8oz block of cream cheese, powdered sugar, vanilla, and cinnamon. Place ~1/4 cup of filling into the middle of the egg roll wrapper. Fold in the left long side, then the right long side, and roll up! Continue with other 3 wrappers. Place in air fryer, 375 for 7-8 minutes, flipping half way. While those cool, mix the 1/4 block cream cheese and 1/4 tsp cinnamon. Spread on the top is the egg rolls, then sprinkle with purple, yellow, green sugar sprinkles. Enjoy!

Looking for a way to get more protein in and heat Looking for a way to get more protein in and heat things up for this cold front?! This Chicken Tortilla soup made with @kettleandfire Chicken Bone Broth not only kicks up the flavor but also packs a 19g of protein punch 🤛 

Ingredients:

3 cartons of Kettle & Fire Chicken Bone Broth
48oz of water 
3 chicken breast
1 small yellow onion
1 tbsp minced garlic 
1 can of corn (drained)
1 can of Rotel
1 can of black beans (drained and rinsed)
1 tbsp tomato paste
1 packet of taco seasoning
1/2 lime juice - squeezed 
1/4 cup half and half 
1 cup of 3 blend cheese, shredded 
Salt/Pepper to taste
3 bay leaves 

In a large pot, add chicken bone broth, water, bay leaves, salt and pepper. Add 3 chicken breasts. Bring to a boil and boil for 10 minutes. Remove chicken from pot and shred with fork once cooled and bring broth to a simmer. In a medium pan, sauté diced onion and garlic in olive oil. Once onion is translucent and garlic is lightly browned, place in broth mixture.

Add the canned ingredients, taco seasoning and tomato paste. Stir and allow to simmer for 10 minutes. Add the shredded chicken back to pot and allow to simmer for another 10 minutes. Add the half and half and cheese. Stir well and allow to simmer for at least another 5 minutes, until these cheese is fully melted.

Serve up and add any toppings you want! 

Toppings: shredded cheese, jalapeños, sour cream, tortilla chips
