Creating a Summer Bucket List: Fruit Pizza Recipe Included

Our summer bucket list normally consists of lots of activities that involve water, but we try to incorporate things we normally wouldn’t do during the school year. Summer time is our opportunity to explore and try new things that the rigid school year schedule doesn’t allow.

Creating a summer bucket list is actually pretty easy to do. You can keep it as simple as your family wants! One of the best ways to create a summer bucket list is to include ideas from the kids. My kids love to think of new things to add to their bucket list. It gives them the chance to feel like they are actually challenging themselves and getting out of their own comfort zone. The summer bucket list can include things as simple as blowing bubbles to taking a trip to the nearest beach.

Let the creativity flow when creating those summer bucket lists and allow yourself to get out of those normal routines to try something new and exciting. We have a new one added to our bucket list this summer: trying a new fruit. Let me tell you, the Zespri SunGold Kiwifruit is one that everyone should be adding to their shopping list.

Do any of you have a to-do list or a summer bucket list already started? As I mentioned, my kids love to have a list of different things to try and conquer over the summer. So creating that summer bucket list is a must for us. With the addition of trying a new fruit to our bucket list, my kids are not only consuming a nutritious snack in between all those summer activities, but are exploring their palates.

There is one kiwifruit that has made the top of our summer bucket list, Zespri SunGold Kiwifruit. Y’all, this by far has to be the best kiwifruit I have ever tasted. This Zespri SunGold Kiwifruit pizza takes the traditional fruit pizza to a whole other level with its tropically-sweet and naturally yellow fruit. The sugared cream cheese layer on top of the sugar cookie dough is just that little something extra. No better way to enjoy fruit pizza than with Zespri SunGold Kiwifruit.

Ingredients
  

  • 4-5 kiwifruits Zespri SunGold Kiwifruit
  • 1 8oz Cream Cheese softnened
  • 1 roll Sugar Cookie Dough softened
  • 1 cup Powdered Sugar plus 1 tbs for rolling
  • 1 tsp Vanilla Extract

Instructions
 

  • Preheat oven to 350
  • Set cream cheese and cookie dough on counter to soften at room temperature; wash 4-5 Zespi SunGold Kiwifruits and set aside

  • Roll out cookie dough onto a parchment paper-lined pizza pan; use 1 tbs powdered sugar to prevent cookie dough from sticking to rolling pin

  • Bake the cookie crust for 10 minutes or until the edges are beginning to turn golden brown; allow to fully cool before adding toppings.

  • While cookie crust is baking, place cream cheese, powdered sugar, and vanilla extract into a large mixing bowl; beat until well combined.

  • Remove the skin from the kiwifruits and slice.
  • Add the sugared cream cheese to the cooled cookie crust and spread until majority of the crust is covered. Then add those kiwifruit slices! Enjoy!

Ingredients:
4 egg roll wrappers
1- 8oz of cream cheese, softened (plus 1/4 block for topping)
1/2 cup powdered sugar
1/2 tsp ground cinnamon (plus 1/4 tsp for topping)
1/2 tsp vanilla extract

Mix the 8oz block of cream cheese, powdered sugar, vanilla, and cinnamon. Place ~1/4 cup of filling into the middle of the egg roll wrapper. Fold in the left long side, then the right long side, and roll up! Continue with other 3 wrappers. Place in air fryer, 375 for 7-8 minutes, flipping half way. While those cool, mix the 1/4 block cream cheese and 1/4 tsp cinnamon. Spread on the top is the egg rolls, then sprinkle with purple, yellow, green sugar sprinkles. Enjoy!

Looking for a way to get more protein in and heat Looking for a way to get more protein in and heat things up for this cold front?! This Chicken Tortilla soup made with @kettleandfire Chicken Bone Broth not only kicks up the flavor but also packs a 19g of protein punch 🤛 

Ingredients:

3 cartons of Kettle & Fire Chicken Bone Broth
48oz of water 
3 chicken breast
1 small yellow onion
1 tbsp minced garlic 
1 can of corn (drained)
1 can of Rotel
1 can of black beans (drained and rinsed)
1 tbsp tomato paste
1 packet of taco seasoning
1/2 lime juice - squeezed 
1/4 cup half and half 
1 cup of 3 blend cheese, shredded 
Salt/Pepper to taste
3 bay leaves 

In a large pot, add chicken bone broth, water, bay leaves, salt and pepper. Add 3 chicken breasts. Bring to a boil and boil for 10 minutes. Remove chicken from pot and shred with fork once cooled and bring broth to a simmer. In a medium pan, sauté diced onion and garlic in olive oil. Once onion is translucent and garlic is lightly browned, place in broth mixture.

Add the canned ingredients, taco seasoning and tomato paste. Stir and allow to simmer for 10 minutes. Add the shredded chicken back to pot and allow to simmer for another 10 minutes. Add the half and half and cheese. Stir well and allow to simmer for at least another 5 minutes, until these cheese is fully melted.

Serve up and add any toppings you want! 

Toppings: shredded cheese, jalapeños, sour cream, tortilla chips
