National Apple Day with an easy granny smith and honeycrisp apple pie recipe.
The month of October is full of so many great national days. It was no wonder that I was going to make a point to celebrate National Apple Day. This easy granny smith and honeycrisp apple pie is so delicious! If you are looking for a great apple pie recipe for any occasion, check out this one.
The apples do matter.
It really does matter what apples are used for an apple pie. Not just any apple will bake well and taste perfect afterwards. Granny smith apples are well known to be the perfect apple for baking purposes. They not only hold their shape well during cooking, but also their tart flavor balances the sweetness in dessert recipes.
My youngest insisted we needed one red apple in the mix. So of course I went with the honeycrisp apple. Honeycrisp apples are similar to the granny smith apple in that they hold their shape nicely as they bake. They also have a just-right balance of sweet and tart flavor. This apple pie was surely going to be perfect with this apple combination!

Celebrating National Apple Day couldn’t have come at a better time since my toddler is all about learning the alphabet. We celebrated with talking about the letter ‘A’ and all the deliciousness in making our very own granny smith and honeycrisp apple pie. I can’t forget to mention the ease of the pie dough. We simply used a premade pie dough by Pillsbury! See for yourself how easy this pie recipe is!
Granny Smith and Honeycrisp Apple Pie
This granny smith and honeycrisp apple pie has the perfect combination of sweet and tangy. If you are looking for a dessert that will be perfect for any occasion, this one is it! Plus it has a fun Halloween twist that you can add.
Ingredients
- PIE CRUST:
- 1 Pillsbury double pie crust
- 1 egg
- FILLING:
- 4-5 Granny Smith Apples
- 1 Honeycrisp Apple
- 1/2 cup of granulated sugar
- 1/2 cup of light brown sugar
- 1 tsp of ground cinnamon
- 1 tbsp of Vanilla Butter Emulsion Extract
- 2 tbsp of all purpose flour
- Juice from 1 lemon
Instructions
- Preheat the oven to 400
- Wash the apples, then peel, core, and thinly slice the apples
- Toss the apple slices into a large bowl and mix in the granulated sugar.
- Add in the light brown sugar and mix well.
- Add in the cinnamon, flour, vanilla extract, and lemon juice. Mix well.
- Remove one of the pie dough discs from the package and roll it out onto a lightly floured surface. Then lay it into the bottom of a deep pie dish.
- Spoon the apple filling over the bottom dough disc and discard the remaining juices.
- Roll out the second pie dough disc and cut it into 1" strips
- Randomly lay the pie dough strips on top of the apple slices, allowing the ends to hang over the edge. You want to give the pie a mummy-look.
- Once you have placed all the pie dough strips on top of the apple pie, press the edges together to seal the top and bottom dough discs and fold under.
- Trim any excess dough with either kitchen scissors or a sharp knife.
- Make an egg wash by cracking 1 egg into a small bowl with 1 tbsp of water. Whisk together until mixed well. Then brush the egg wash onto the surface of the pie crust.
- Cover the edges of the pie with either a pie shield or strips of foil to keep them from over browning the first 25 minutes.
- Bake at 400 for 25 minutes, then carefully remove the pie shield. Turn the oven down to 375 and cook an additional 30 minutes until the top is golden brown and the juices are bubbly.
- Remove from oven and cool for at least 2 hours.

Notes
If you want to go for the 'mummy' look, cut a Halloween green Reeses cup in half. Add it to where an eye would be!
