With spring finally here, all I can think about is how we are even closer to the summer. Warmer weather also means time for getting together with family and friends for grilling out and watching whatever sports events that are on the schedule! Hamburgers and french fries have always been on our menu when it comes to these type of gatherings.

A twist to the typical hamburger menu item.

Time for a twist on the basic hamburger menu item, especially for those who are on a healthier diet kick. I bring to everyone a hamburger salad made 2 different ways with McCain® potato products ! One way is without all the added toppings and spicy dressing, but with a topping of McCain® Smiles® Mashed Potato Fries and Extra Crispy Crinkle Fries. The perfect salad for all those younger children. The second way is for those who love that extra spiciness, topped with a spicy salad dressing and a shredded pepper jack cheese. Can’t forget to mention the McCain® Seasoned Curly Fries that add that crispy bite to this delicious hamburger salad.

Don’t have to be a salad lover.

You don’t have to love salads to enjoy this recipe. I look at this recipe made 2 ways as basically a deconstructed hamburger with the lettuce, tomato, onion, cheese and of course those McCain® Smile, Curly, and Extra Crunchy Fries. You could even add dill pickles! Did you know that you can grab all the ingredients at Walmart? Yep, even the McCain® potato products can be easily picked up in the freezer section at Walmart. I would say that is a win when you are planning a get together! McCain® is a multi-national frozen potato products company established in Canada, but making itself a house hold name in the USA. They are obviously great products for dipping and layering!

Planning that get together party for viewing that sports game couldn’t be any easier. You have the main meal on the menu. All you need now is those guests, drinks, and a tv for game watching! Don’t forget to use that McCain products at Walmart rebate!

Hamburger Salad: Made Ways Recipe

A twist to the typical hamburger recipe: Hamburger Salad made 2 ways! The original ketchup-mayonnaise dressing or the Sriracha-mayonnaise dressing has nothing when compared to the toppings of this salad. It is basically a deconstructed hamburger with those tasty McCain® potato products on top along with tomato, lettuce, cheese, onion, and a juicy hamburger patty.

Ingredients
  

Hamburger Patties

  • 1 1/2-2 lbs 80/20 ground beef You can use ground chicken, bison, or turkey. Just make note that these meats will cook diferently and may be more dry if overcooked.
  • 1/4 cup seasoned breadcrumbs
  • 1 Egg
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp onion powder
  • 1 tsp Garlic Powder

Salad

  • 1 bag buttered lettuce
  • 1 bag spring mix lettuce
  • 1 cup shredded mild cheese
  • 1 cup shredded pepper jack cheese
  • 1 bag McCain® Smiles® Mashed Potato Shapes
  • 1 bag McCain® Seasoned Curly Fries
  • 1 bag McCain® Extra Crispy Crinkle Fries
  • ~4 cups vegetable oil, for frying Enough oil for a few inches in a heavy pot or fryer

Ketchup-Mayonaisse Dressing

  • 1/4 cup ketchup
  • 1/4 cup mayonaisse

Sriracha-Mayonaisse Dressing

  • 1/4 cup Sriracha Sauce
  • 1/4 cup mayonaisse

Instructions
 

Hamburger Patties

  • In a medium sized bowl, add the ground beef, egg, and seasonings. Mix well with your hands until all is incorporated.

  • Add in breadcrumbs. Mix well and then form the hamburger patties. You can have a smaller sized patty (about 31/2"-4" across, 1" thick) for the kid version, a larger sized patty (about 5" across and 1"-2" thick) for the adult version. Note that the patties will shrink some during cooking when using 80/20 ground beef.

  • Cook these patties via grill or in a cast iron skillet. Cook patties 5 minutes on one side, then flip and continue to cook for another 5 minutes.

  • Place patties on a paper towel-lined plate while they cool.

Salad

  • Cook the McCain® potato products by heating up a few inches of oil to 300 degrees F. In 3-4 batches, fry the potatoes for about 4 to 5 minutes, until they are becoming more golden. Remove each batch from the oil and drain them on a paper towel-lined plate or tray.

  • If salad mixes are not pre-washed, make sure to do so before eating. Place serving size amounts (about 1 1/2-2 cups for kid version and 3-4 cups for adult version) in bowls or plates and set aside. Buttered lettuce: for kid version and Spring Mix: for adult version
  • Prep the tomato and onion by chopping up; set to the side.

  • Prepare the dressings. For the each dressing, add the ingredients and mix well. Set to the side.

  • Once the hamburger patties and the potato products have cooled down enough to eat, begin to construct the salads. For the kid version, each bed of buttered lettuce will be topped with a cut-up hamburger patty, shredded mild cheddar cheese, diced tomatoes, McCain® Smiles® Mashed Potato Shapes and McCain® Extra Crispy Crinkle Fries, and the ketchup-mayonnaise dressing.

  • For the Adult Version Hamburger Salad: each bed of spring mix lettuce will be topped with 1-2 hamburger patties, shredded pepper jack cheese, diced tomatoes, diced onion, McCain® Seasoned Curly Fries and the Sriracha-mayonnaise dressing.

Love it when I try out a new recipe and it’s a h Love it when I try out a new recipe and it’s a hit 🫶🏻 These Thai Chicken Lettuce Wraps really are soo good! You know the ones at PF Chang’s that you can’t decide if they should be an appetizer or your main meal?! Well, these are that good!

2 lbs ground chicken
2 tbsp sesame oil
1 medium yellow onion, diced 
4 cloves garlic, diced 
2 tbsp minced ginger
1/2 cup soy sauce 
4 tbsp sweet red chili sauce 
2 limes , juiced
2 tsp maple syrup 
1 cup shredded carrots
3-4 scallions, diced 
1/2 cup cashews 
Butter lettuce for wraps!

Cook ground chicken- salt and pepper to taste; heat sesame oil in large wok and add onions; cook on medium heat until translucent and add ginger and garlic; cook for 2 minutes then add the chicken and mix well; make the soy sauce mixture- in a medium bowl, add soy sauce, sweet red chili sauce, lime juice and maple syrup; add this to the chicken mixture and stir well; add the carrots and cook for 4 minutes- until carrots begin to soften; lastly add the scallions and stir! Cashews can be added here before preparing the wrap 🫶🏻

Did someone say Dubai Chocolate Brownies? Yes inde Did someone say Dubai Chocolate Brownies? Yes indeed! These are not only crave worthy and simple, they beat that price! One of the key ingredients: @kelloggsus Frosted Mini Wheats.

1 box of brownie mix
1 - 1 1/2 cups Frosted Mini Wheats
3 tbsp unsalted butter
1/4 cup Tahini
8oz jar Pistachio Cream / Butter
1 - 11oz bag of semisweet or milk chocolate morsels 
1 tbsp coconut oil 

Bake brownie mix according to box, making sure to line pan with parchment paper. Melt 3 tbsp butter in a saucepan and add the Frosted Mini Wheats. Stir and crush up Frosted Mini Wheats with spoon. Cook on low-medium for 2-3 minutes and remove from heat.

Add the tahini and pistachio cream to the Frosted Mini Wheats mixture. Once brownies have completely cooled, add the Frosted Mini Wheats mixture to the top of the brownies, reserving a little in a ziploc bag for decorative topping later.

Melt the chocolate morsels and coconut oil in increments, making sure to stir to prevent burning. Once completely melted, pour on top of the Frosted Mini Wheats/Pistachio mixture. Then add the decorative touch with the left over mixture before placing it in the fridge to set. It will take about an hour to fully set!

1 box of GF @krusteaz  Cinnamon Swirl Crumb Cake
3/4 can of @libbyspumpkin Pumpkin Puree
4 eggs
1 tsp of vanilla extract
1/2 tsp of ground clove 
1 tsp of cinnamon 

Sooo good!
