Oatmeal Granola Bars

I am a huge fan of oatmeal and granola bars. I can eat both for any meal during the day! My kids didn’t fall to far from the tree in relation to my love for granola bars. All 3 of my kids LOVE granola bars. I decided to take our favorite food and make a homemade version, oatmeal granola bars.

Granola Bars Your Way

Oatmeal granola bars have never been so easy. You can change these up depending on what you like: add chocolate chips, coconut flakes, chopped almonds as well as switch up the type of oatmeal…all up to you! I kept to a simple recipe to give you a base idea.

I decided to stick to two different types of instant oatmeal: High Fiber Maple and Brown Sugar and Simple Grains Honey Almond. You will need 8-10 pouches of Instant Oatmeal. The reason for the 8-10 pouches is depending on what texture you are wanting. If wanting a little more chewy oatmeal granola bar, stick with the 8 pouches.

You can even change up the thickness of these: want a more thicker granola bar? Bake these in a 8×8 pan. If you want a thinner granola bar, bake in a larger size pan, 9 x13. I wanted to make my oatmeal granola bars more like breakfast bars and went with the 8×8 pan.

Do your kids love the chocolate dipped granola bars? If so, you can melt 1/2 cup of milk chocolate chips and pour on top of these granola bars (even better, dip them into the chocolate mix!). Let them sit in the fridge for about 1 hour or until chocolate has hardened. So tasty and much like eating those chocolate dipped Quaker granola bars.

Get ready to be amazed as well as wowing others with these homemade oatmeal granola bars! I could not keep these long in my house 🙂

Oatmeal Granola Bars

Homemade Oatmeal Granola Bars have not been so easy to make until now. Not only are these easy but are so delicious! A win for this family.

Ingredients
  

  • 1/2 cup honey
  • 1/4 cup Butter, unsalted
  • 1/2 cup peanut butter, creamy
  • 8-10 pouches Instant Oatmeal Maple & Brown Sugar (5 pouches) and Honey Almond (5 pouches)

Instructions
 

  • Preheat oven to 350
  • Heat butter and honey until butter is melted; I did all of this in the microwave but can be done on stove top
  • Add rest of ingredients to the butter/honey mixture and mix well
  • Pour oatmeal mixture in a lined pan (I chose to go with 8x8 for thicker bars) and press down.
  • Bake for 5 minutes. Then allow to cool for 10 minutes.
  • Once the pan has completely cooled, place in refrigerator for 1 hour. This will allow for all the ingredients to come together and to form the granola bars.
  • Remove from refrigerator and cut into bars. Store these in an air tight container for 1 week. Can be kept at room temperature.

All you need:

Pretzels (3 per snack)
Pretzel Stick (1 per snack)
Rolos (1 per snack)
Green M&M’s (1 per snack)

Preheat oven to 350. Assemble your clovers, then place one Rolo where all 4 pretzel pieces touch. Bake for 3-5 minutes, enough time to soften Rolo. Remove from heat and press 1 M&M in the center of the Rolo, making sure all pretzel pieces are still touching and Rolo is helping them stick together. Allow to cool for 10 minutes, enough time for the chocolate to harden!

This weekend caught me off guard with how I was go This weekend caught me off guard with how I was going to feel when I left. Headed to Houston not sure what to expect with the new NCA venue, but also the fact Chloe had sprained her foot earlier that week. As a mom, you second guess all the things… is it bad I let her do this? Am I wrong for telling her she needs to compete? Let me tell you, the moment she walked onto that mat.. I knew. It wasn’t about me, it was about her. This year has been a learning year. Learning a whole new team and learning a whole new position. We have had our emotional ups and downs, but this weekend sealed the deal.

Day 1 didn’t go our teams way- left us in last place. Tough when you know what they can do. Day 2 was their day… hit 0 with a 4 point increase. Moving from last place to 4th with only a 0.5 difference from being in that winner’s circle. When Chloe landed that last pose at the end of day 2, all I could do was cry. They came back and did their thing. Seeing Chloe out there, killing it and loving it is what it’s about. Don’t get me wrong, a cool jacket is something I know she wanted. But… she knows she went into beast mode this weekend, pushing through the issues with her foot, and did the darn thing. I couldn’t be more proud of her and this team!
