I am a huge fan of oatmeal and granola bars. I can eat both for any meal during the day! My kids didn’t fall to far from the tree in relation to my love for granola bars. All 3 of my kids LOVE granola bars. I decided to take our favorite food and make a homemade version, oatmeal granola bars.
Granola Bars Your Way
Oatmeal granola bars have never been so easy. You can change these up depending on what you like: add chocolate chips, coconut flakes, chopped almonds as well as switch up the type of oatmeal…all up to you! I kept to a simple recipe to give you a base idea.
I decided to stick to two different types of instant oatmeal: High Fiber Maple and Brown Sugar and Simple Grains Honey Almond. You will need 8-10 pouches of Instant Oatmeal. The reason for the 8-10 pouches is depending on what texture you are wanting. If wanting a little more chewy oatmeal granola bar, stick with the 8 pouches.
You can even change up the thickness of these: want a more thicker granola bar? Bake these in a 8×8 pan. If you want a thinner granola bar, bake in a larger size pan, 9 x13. I wanted to make my oatmeal granola bars more like breakfast bars and went with the 8×8 pan.
Do your kids love the chocolate dipped granola bars? If so, you can melt 1/2 cup of milk chocolate chips and pour on top of these granola bars (even better, dip them into the chocolate mix!). Let them sit in the fridge for about 1 hour or until chocolate has hardened. So tasty and much like eating those chocolate dipped Quaker granola bars.

Oatmeal Granola Bars
Ingredients
- 1/2 cup honey
- 1/4 cup Butter, unsalted
- 1/2 cup peanut butter, creamy
- 8-10 pouches Instant Oatmeal Maple & Brown Sugar (5 pouches) and Honey Almond (5 pouches)
Instructions
- Preheat oven to 350
- Heat butter and honey until butter is melted; I did all of this in the microwave but can be done on stove top
- Add rest of ingredients to the butter/honey mixture and mix well
- Pour oatmeal mixture in a lined pan (I chose to go with 8x8 for thicker bars) and press down.
- Bake for 5 minutes. Then allow to cool for 10 minutes.
- Once the pan has completely cooled, place in refrigerator for 1 hour. This will allow for all the ingredients to come together and to form the granola bars.
- Remove from refrigerator and cut into bars. Store these in an air tight container for 1 week. Can be kept at room temperature.
