Light & Fluffy Cake and Strawberries Trifle Dessert

With it being summer and absolutely smouldering outside, a light and fluffy dessert is all I need. Ice cream, slushies, and sno cones are always a great go-to but what about something outside this list? Well, I decided to try out a quick and easy trifle recipe for the 4th of July. Let’s just say it was a hit with the entire family. It wasn’t too sweet and the cool whip layer gives it the extra fluffiness to make it that perfect dessert when things seem to not get cool enough! I went with a blue velvet cake for this trifle. This cake is so good! It must be the stick of butter needed with the cake mix. So good and moist!

You can of course go with any other cake mix, but this one goes so good with the cool whip and strawberry layer. No worry of it being too dry or crumbly. Plus it is a fun color! A few other options would be to add a little color to the cool whip with only 1-2 drops of food coloring. Not a fan of strawberries? Not a problem! Opt for another fruit. Just note that some fruits may be a little more ‘juicer’ and will change the texture of the trifle a little. I was even contemplating a fruit layer that consisted of strawberries, blueberries, and blackberries: yum!

So if you are looking for that perfect dessert that isn’t too sweet or dense and is just enough to satisfy that sweet teeth, this is your dessert. Did I mention it is super easy? Great recipe to put together last minute and perfect for any little bakers in the house that want to help out in the kitchen 🙂 My oldest had a lot fun helping with the layering process.

If you are looking for something to satisfy your sweet tooth that is the perfect mixture of light, fluffy, and not too sweet, then this trifle is a must try. The fruit and cool whip layer along with the cake pieces makes for a delicious and refreshing dessert.

Ingredients
  

  • 1 cup confectioner's sugar
  • 1-2 cups chopped strawberries Can add more or a less, depending on your love for strawberries
  • 2 8 oz tubs cool whip

Instructions
 

  • Bake the cake as directed on box.

  • While the cake is baking, prepare the other ingredients. Wash and cut strawberries and set aside. Gently fold the 1 cup of confectioners sugar with the cool whip. Place back in fridge to chill until needed.

  • Once cake has fully cooled, cut it in small square pieces-bite size.

  • Time for layering! At the bottom of a trifle dessert dish or a large serving bowl, place 1/3 of the cake. Next layer the cool whip mixture followed by some of the strawberries. Add another layer of cake pieces, cool whip and strawberries until all ingredients are used up, ending with the strawberries on top.

  • Cover and place in the refrigerator for 15 minutes to chill.
  • Enjoy!

Notes

*This cake can be made sugar free: opt for sugar free cool whip and a sugar free cake mix! Gluten free cake is also yummy!

Turkey, Ham & Cheese Hawaiian Roll Sliders 🫶🏻

~6 Black Forrest Ham Slices (thin cut)
~6 Turkey Slices (thin cut)
6 slices provolone cheese slices
12 slider rolls Hawaiian Rolls
1 stick unsalted butter
2 tsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp italian seasoning

Cover all the sandwiches with the cheese, turkey and ham slices. Lastly, put the tops onto each of the rolls.
In a microwavable safe bowl (can also do this on the stove top), melt the 1 stick of butter in the microwave (about 1 min); Once the butter is melted, add the Worcestershire sauce, onion powder, italian seasoning, Dijon mustard and garlic powder. Mix well and pour it (or simply brush it) onto the tops of each of the sandwiches.

Preheat oven to 375.
Bake the sandwiches (still covered) for 15 minutes or until the cheese is melted. Serve warm!

Trueats Pizza Crust Mix and Biscuit Mix are gluten-free and nut-free, and only contain 5 ingredients. Did I mention they ended up tasting so good? From the biscuit mix to the pizza crust mix- 5 stars from this family. So good that I am sharing our family favorite Greek Chicken Pizza recipe. You can thank you me later. 🫶🏻

Ingredients:
 ( For Crust)
1 bag of trueats Pizza Crust Mix
1 tsp baking powder
2 tsp sugar
2 tbsp olive oil
1 tbsp apple cider vinegar 
1 cup (warm) milk
1 tsp instant yeast (optional)
1 tbsp garlic powder 
1 tbsp Italian seasoning 

 (For toppings)
1lb of boneless chicken thighs, cooked -
 seasoned in Greek seasoning / marinade, 1 tsp
  paprika, salt & pepper
1 jar of basil pesto 
1 jar / can of artichoke hearts
1 jar of roasted red bell peppers
1 cup of shredded mozzarella cheese
1/2 cup of grated Parmesan cheese

Make pizza according to bag- plus the seasonings; top with toppings and pop back in oven to melt cheese. 🤌🏻

 1/2 cup butter, softened 
 1/2 cup brown sugar 
 1/3 cup granulated sugar
 1 tsp vanilla extract 
 1 egg
 1 1/4 cup flour
 1/2 tsp baking soda
 1/4 tsp salt
 1 cup chocolate chips 
 Box of chocolate sandwich cookies
Optional : salted caramel ice cream, whipped cream, Halloween sprinkles, chocolate and caramel syrup

Preheat oven to 350 ; mix sugars and butter in a medium size bowl; then add 1 egg and vanilla extract, mix; in another bowl, add the dry ingredients and stir; add dry ingredients to butter-sugar mix; lastly, fold in chocolate chips; place half the dough in the bottom of a small cast iron skillet; top with crushed sandwich cookies; add the rest of the dough on top, covering entire bottom layer; top with more crushed sandwich cookies and bake for ~30-40 minutes, checking at 30 minute mark to see if edges are brown and center looks done. Top with ice cream, whipped cream, sprinkled and chocolate/caramel drizzle!

- 1 pack of Neighborly Food Co. Louisiana Style Red Beans & Rice
- 2 tbsp butter
- 2 andouille sausage links, cut into pieces
- 1 cup of season blend OR 1/2 white onion, chopped
OPTIONAL : 2 tsp Cajun seasoning 

Prepare pack per directions on back; while rice/beans are boiling, brown the cut andouille sausage and onion ( or season blend) ; you can sprinkle the Cajun seasoning on here; mix the browned andouille sausage and onion in with the cooked Louisiana style Red Beans and Rice. Enjoy!
